- First peel and chop the eggplant and boil them in cooker with three or four whistles
- Now at other side first roast in dry pan
- Now keep separate all the spices and in same pan put sunflower oil
- Let it make properly hot and add cumin seeds
- Add garlic and ginger and green chilli
- Roast the cumin seeds and add chopped onion roast them also but not too much just make them dry and golden
- Add tomatoes and all the spices simmer them gently and at very low heat let it roast at least for 15 to 20 minutes
- Now add peas and boiled eggplant
- Let mix them with masala gently and keep at low flame for 20 to 25 minutes
- Garnish with coriander leaves
