Steps to make Paani Puri:
  1. For preparing dough first add hot(that can be handled with hand) oil in suji and mix
  2. Now add hot(that can be handled with hand) water and mix for 5 mins. Dont knead like roti but gently mix
  3. Leave it covered for rest for 30 mins
  4. Meanwhile make 3 different paani in 3 different bowls by mixing paste, masalas and water and strain and keep in fridge
  5. Heat up oil and mix the dough once again for 5 mins
  6. Make small balls with dough.
  7. For rolling the small puris, first press with hand and then roll only from one side. Roll in oval shape and fry
  8. Add boondi to all the paanis.
  9. When serving, break puris from top,fill the mixture made with potato,chickpeas, salt and red chilli powder and they are ready to be gulped with sweet, spicy and hing wala paani
