  1. Make bacon in skillet, remove and drain extra oil from pan, but not all..
  2. Season and sautee flattened chicken breast in pan with bacon grease and maybe a tablespoon of olive oil or butter…. you could also add about 1/4 cup of white wine to the pan once chicken is browned.
  3. Remove chicken and add sliced onion, bell pepper, mushroom. Season with salt and pepper.
  4. Place chicken in oven safe pan. Add cooked mushrooms, bell peppers, onions, and garlic.
  5. Next add chopped bacon pieces and tomatoes
  6. Add grated cheese on top
  7. Preheat: Bake 400° for 15-25 minutes until cheese is melted and bubbly
  8. (flatten out chicken breast with soft side of mallet to your liking) you may need to cut in half.**********
