  1. To make Puri…
  2. In a glass bowl take 1 cup maida.And one cup rava.
  3. Add salt,one teaspoon refined oil and palak puree and water.
  4. Knead the maida to a tight dough.
  5. Keep it aside for minimum 10 minutes.
  6. Make small small Puri from the dough with the help of cookie cutter
  7. Deep fry the Puris in medium hot oil.And keep it in air tight jar.
  8. For stuffings.. ln a bowl mash boiled potatoes.Add salt red chilli powder chopped green chilies onion boiled yellow peas.chat masala and roasted jeera powder.Add coriander leaves.your stuff ing is ready.
  9. For Pani…ln a blender take half cup mint leaves,add green chilies,add little water and blend.
  10. To this mixture add 1 cup more filtered water.
  11. Then add amchur powder.
  12. 1/4 cup tarmarind juice.
  13. Add salt..
  14. Give a good mix..
  15. Pani is ready..
  16. At the time of serving…first take a puri..make a hole at the centre with the help of your thumb.
  17. Stuff the Puri with aloo masala.served it with prepared tarmarind pani.
