  1. Get 2 cups wheat flour
  2. Prepare 1 cup blanched palak puree
  3. Make ready 1/4 cup grated carrot
  4. Make ready 1/4 cup grated cabbage
  5. Take 1 tbsp curd
  6. Take 4 green chillies
  7. Get 1/2 tsp mustard seeds
  8. Get 1/4 tsp hing
  9. Make ready 1/4 tsp turmeric powder

  11. Prepare as needed Water

Steps to make Carrot Cabbage Palak Paratha:
  1. Wash palak, cut randomly, blanched in hot water for 2-3 minutes,drain water, pour chilled water to stop palak to overcook and retain green colour. Grind in mixer blanched palak with 2 green chillies and make smooth puree.
  2. Take wheat flour, add curd,add salt, but keep in mind that palak has it's own salty taste,add palak puree as required to knead a semi soft dough, if u need u can add water, apply little oil and knead well, keep aside for couple of minutes.
  3. Take a kadai,on medium flame, put 1 tbsp oil, hing, mustard seeds, add 2 green chillies cut in slits, saute it, add grated cabbage and carrot, add turmeric powder and salt, mix well, saute for 2-3 minutes, don't overcook. Keep aside to cool it.
  4. Make same size of balls out of dough, roll it and make it puri size, put grated and sauteed cabbage carrot stuffings, close puri side by side all 4 sides applying water on edges make square paratha, make all parathas in same way.
  5. Heat a tawa, on medium flame, put paratha and roast both sides applying oil and make it in golden brown colour, do all parathas in same manner.
  6. Serve hot and nutritious paratha with atchar/ curd.. Enjoy carrot cabbage palak paratha
