Instructions to make Vegetable Batata Vada/Aloo Vada:
  1. In a chopper jar add french beans, carrots and cauliflower. You can add any vegetables of your choice.
  2. Finely crush them into small pieces.
  3. Heat kadhai on medium-low flame.
  4. Add cumin seeds, asafoetida powder and curry leaves.
  5. Add ginger, garlic and chilli paste, saute.
  6. Add crushed vegetables and saute for 2 minutes. Do not cook the vegetables completely.
  7. Add salt, turmeric powder, red chilli powder and coriander cumin powder. Mix well and saute for 2 minutes. Switch off the flame and let the mixture come to room temperature.
  8. In a bowl take boiled potatoes, smash them and add dry mango powder.
  9. Add vegetable mixture and mix well.
  10. Form medium size vada/balls.
  11. In another bowl add gram flour, salt and turmeric powder, add water and make batter. (Shouldn't to too thick or too thin, pourable consistency) Let it rest for 10-15 mins on the counter.
  12. Dip your vada/balls into the batter and coat them properly.
  13. Put vada/balls into deep hot frying pan.
  14. Fry them from all the sides properly until evenly cooked.
  15. Your healthy vegetable Batata vada are ready to serve.
  16. Serve them with chutney, ketchup, mayonnaise, etc. Along with fried salted green chillies. Enjoy!
