Steps to make Mumbai style Pav Bhaji:
  1. In a pan, add the potato, cauliflower, peas carrots, with tsp of salt, 0.5 tsp turmeric powder and some boiled water from the kettle (Approximately 1 and a half cups). Allow this to cook on medium heat for 20 minutes, or until vegetables are cooked and soft.
  2. In a separate pan heat the oil, add the roasted cumin powder, 0.5 tsp of turmeric powder and the onions. Saute the onions for a minute, then add 50 grams of butter, mix until well incorporated and then add the garlic paste. Cook until raw garlic paste disappears (within 30 to 40 seconds) and then go in with chopped tomatoes. Cook for a couple of minutes, before adding one tsp of salt, Kashmiri chili powder and 2 chopped green chillis.
  3. Now add a further 50 grams of butter, chopped green pepper, and cook until they are soft in consistency. Finish off with either pav bhaji masala or with garam masala, then set aside. Return back to the pan with the vegetables that are cooking and add the ginger paste and the garlic paste. Once vegetables are soft, decant into the pan with the cooked masala, then using a potato masher begin to mash the vegetables until all well Incorporated.
  4. Garnish with the remaining butter, fresh coriander and finely chopped onion. This is then served with a buttered pav (roll) that is fried on a tawa (skillet or frying pan).
