How to make Mughlai Paratha: Take a big bowl and mix flour, baking powder and salt. Brush the surface of the paratha with the beaten eggs. Cook the paratha on it, applying oil along the edges. - First make a soft dough.add plain flour+ salt + 2 spoon Oil mix together. Make smooth and soft dough.
- For stuffing
- Heat a wok.add oil 2 tbsp
- Oil is heated add cumin when cumin r crackle add onion chopped fry.
- Changes the colour of onion add green chilli, ginger garlic paste, termeric fries until raw smells gone.
- .then add all chopped vegetables one by one,stir,cover cook it.in meanwhile stir the vegetables.
- When vegetables are cooked
- Add mashed potatoes,peas,paneer, garam masala, raosted Masalas,or. Salt to taste
- Here I am using raosted Masalas (cumin or red chilli raost and grind)
- Fry it again 2 to 4 min continueaosly stiring it.add coriander leaves.now switch off the flame and cool down
- Now make paratha.take a lemon size ball like portion of the dough.
- Make a big chapati stuffing keep in centre lightly spread it.
- First fold left side then right side over the stuffing.then fold front or uper side like shown in picture.
- Lightly press and lock it and roll carefully with soft hand
- Now heat a tawa or pan.
- Paratha put on tawa roast both side.
- On low to medium flame untill crispy or golden brown.too.
- Now serve with green Chutney or ur choice of chutney.
