- Take 1/2 cup jawar (sorghum)

Steps to make Jawar mint khichadi. (Sorghum):
- Soak jawar for 10-12hrs. Pressure cook vegetables and do 1 whistle. Keep aside. In Same water add soaked jawar and washed daal (don't soak daal, just wash and add) add salt as require and enough water. Do 4-5 whistle and let it cool down.
- Heat oil in a vassal, add cumin seeds and vegetables (onion, tomato, capsicum, cooked veggies)add salt and saute for a min. Add cooked jawar and daal and mix well. Saute for a min.
- Add mint paste and mix, now add black pepper powder and mix well, simmer for 2-3min. (If require, then add some water) Transfer into bowl, garnish with coriander and serve hot with curd, or buttermilk.
Sorghum is another one of the ancient cereal grain, and grown mostly for their fodder value. Sorghum has high nutritional value, with high levels of unsaturated fats, protein, fiber, and minerals like phosphorus, potassium, calcium, and iron. The remedy to make it soft ' khichadi' pongal one must roast till fragrance then crush to coarse (mixer, flour mill, by hand in wooden mortar - pestel) soak couple of hours.
