Instructions to make Kadai Gosht Mutton:
  1. First up we shall make the kadai masala: Heat a non stick pan, and add all the ingredients of the kadai masala excluding the fenugreek leaves and roast for a few minutes. When everything is well roasted, add the dry fenugreek leaves, give it a stir and remove from the heat
  2. Give it a few minutes to cool, then grind into a coarse powder and set aside
  3. Heat some oil in a separate pan, and then add the goat/lamb and cook it till its brown
  4. Next add the turmeric, onions, ginger and garlic pastes, and the tomatoes and season with salt
  5. Cook on medium low for about 40mins so that the meat is cooked through. Then add the rest of the ingredients: kadai masala, yogurt, chile, chile powder, chopped coriander and the mint. Give it all a good stir and let it cook for a few more mins and remove from the heat
  6. Serve hot with some freshly made rice
