Spicy ammini kozhukattai - Tamil style recipe made with rice flour. My son is a fan of ammini kozhukattai. Apart from making it during festival times, it has become a staple lunch box item. Kozhukattai, also known as �Modak�, is one of the most popular recipes of Kerala.
Instructions to make Mittai Kozhukattai:
- Sieve Rice flour, add a pinch if salt and mix well.
- Add Ghee and gently add hot water to make a soft dough.
- Mix it with a spoon or fork and let it rest for 10 minutes by closing with a plate.
- Now it's ready to make kozhukattai. Divide it into small portions.
- Grease the mold with oil and start to stuff dough over corners. Give a gentle press.
- Take all 9 types of mittai's and start dumping it one by one.
- Close the bottom and release from mold gently.
- Again Grease the mold with oil and make the next kozhukattai. Make all kozhukattai's the same way.
- Make all 9 kozhukattai with 9 mittai's and place it in a oil greeced plate.
- In a boiler pour hot water and place kozhuttai plate over a stand. Let it steam for 10 minutes by closing the lid.
- Now it's time to open all surprises. All soft kozhukattai's are ready to be served.
