- Chop and soak Methi leaves for 15mins.
- Wash under running water 3-4 times.
- Blanch Methi leaves.
- Drain and squeeze extra water.
- Grind and keep it aside.
- Heat 4 tbsp ghee in a kadai.
- Add whole garam masalas and onions.
- Saute onions till transparent.
- Add tomatoes ;ginger ;garlic and green chilli paste.
- Mix well.
- Add all the dry masalas and malai.
- Saute till oil leaves the sides of the pan.
- Keep it aside and allow it to cool.
- Grind onions,tomatoes,ginger ;garlic,green chillies and Kaju to a smooth paste.
- Boil Gobi florets for 10mins.
- Drain and check no worms are there.
- Keep it aside to cool.
- Meanwhile in a kadai heat oil.
- Sprinkle little salt on Gobi.
- Sprinkle little salt on aloo
- Mix and fry separately till they are soft,tender and golden in colour.
- Keep it aside.
- In a kadai, heat remaining 2tbsp ghee and add methi paste.
- Saute for 10mins and add onion and tomato paste.
- Saute for 10mins.
- Add 2 cups of water.
- Boil for 10-15 mins.
- Add aloo and gobi.
- Mix well.
- Boil for more 10-15mins.
- Adjust the taste.
- Transfer in a serving dish.
- Serve hot with kulchas,parathas or rotis.
