The ingredients needed to make Easter Chowder:
  1. Get 3 cup Leftover mashed potatoes
  2. Prepare 3 cup Ham stock (boiled down from bone and drippings)
  3. Get 1 can Creamed corn
  4. Get 1 cup Milk or cream
  5. Prepare 3 cup Frozen or canned corn (drained)
  6. Take 1 lb chopped leftover ham
  7. Take 1/2 each Onion, diced
  8. Take as needed Seasonings to taste. Start with no salt as ham is salty.

A delicious, traditional, cream based chowder, this recipe calls for the standard chowder ingredients: onion, celery, potatoes, diced carrots, clams, and cream. A little red wine vinegar is added before serving for extra flavor. Heat olive oil in a medium Dutch-oven over low heat. Add onion and celery and cook, stirring, until soft.

Instructions to make Easter Chowder:
  1. Saute the onion in a little butter or oil until tender.
  2. Combine all remaining ingredients in a pot.Stir well to combine and heat over medium to medium low heat. Stirring occasionally.
  3. Once chowder is heated through, taste and add seasoning to your liking. I added some garlic powder, onion powder, parsley & white pepper to mine.
  4. This could easily be put in a slow cooker and left on low all day as well.

Add fish stock and bay leaves, and bring to a simmer. Secure lid on blender, and remove center piece to allow steam to escape. Place a clean towel over opening. Stir mixture back into remaining chowder. Bring to a simmer over medium.
