- Prepare 1 tbsp Coriander seeds
- Take 1 tbsp Urad dal / black gram
- Get 1 tbsp Chana dal / bengal gram
- Take 3 Dried red chilies
- Make ready 1 small piece cinnamon
- Take 3 cloves
- Get 2 cardamom
- Prepare 1 small piece star anise
- Prepare 1/2 tsp fennel seeds
- Prepare 4 tbsp grated coconut
- Take as required oil
Steps to make Vangi Bath / Brinjal Rice:
- Cook the rice and keep aside
- To make the vangi bath powder, first dry roast the coriander seeds and set it aside to cool.
- Heat a little oil in a pan and roast urad dal,chana dal,red chillies,cinnamon, clove, cardamom,star anise and fennel seeds until light brown.
- Add grated coconut and roast it until golden brown. Cool it and powder it together with the roasted coriander seeds.
- Heat oil in a wok and add cinnamon, clove,cardamom,fennel seeds, cumin seeds,bay leaves and red chilies and saute for a minute.
- Add green chilies and onions. Fry till the onions turn translucent and add salt.
- Add brinjal and saute it for 2-3 minutes. Cover and cook until the brinjal is done.
- Add the vangi bath powder and mix it thoroughly and cook for a couple of minutes. Add water if needed.
- Add rice and lemon juice to the well cooked masala. Mix it well.
- Adjust the salt [ if needed] and serve.
- Vangi bath goes well with Raita /Plain curd, Pappad and Pickle
