Instructions to make Kadai Paneer:
  1. In a cooking pan, dry roast coriander seeds, cumin seeds, fennel seeds, cloves, cardamoms and peppercorns. Allow it to cool. Add it to a blender. Blend it and keep aside.
  2. In a cooking pan, heat oil. Add onions and saute till the onions are light brown.
  3. Add tomatoes and cook till the tomatoes are soft. Add it to the ground spices. Also add, amchur powder (raw mango powder) and little water and grind it into a smooth puree.
  4. In a cooking pan, heat butter. Add ginger paste, garlic paste and saute till the raw smell leaves. Add green chillies which are slited in the center.
  5. Add onions and saute for 2 minutes.
  6. Add green bell peppers and saute for a minute.
  7. Add the masala paste and saute for a minute.
  8. Add little water for the gravy. Let it come to a boil.
  9. Add cream or yogurt (optional).
  10. Add the paneer cubes and stir fry gently.
  11. Add salt and freshly chopped coriander leaves. Serve warm with paratha/naan/roti.
  12. If you want a brighter colour, fry the onions till they are golden brown.
