  13. Take to taste Coriander, salt and pepper
  14. Get Condensed milk- if too acidic

The ceviche is made with salmon, shrimp, and of course, lots of lime juice. You can substitute other fish, like tilapia, as well. Use fewer chile peppers (or remove the seeds) if you don't like it too spicy. In Peru, it is generally eaten with sweet potatoes.

Instructions to make Ceviche:
  1. Peel the sweet potato and cut into chunks
  2. Boil the sweet potato chunks in a pan with the cinnamon, cloves and sugar until tender then leave to side (approx 25 minutes)
  3. Cut the fish into 10p pieces
  4. Mix the fish with the juice of the limes, the chopped onion and the other ingredients
  5. Leave to ‘cook’ in the acid for 10 minutes
  6. Taste and adjust seasoning. Add some condensed milk if acid is too strong
  7. Serve with the sweet potato and some corn

Garnish the ceviche with cilantro leaves before serving. Suggested Pairing Chile tends to be known for inexpensive reds, but the real secret is the country's terrific Sauvignon Blancs. Ceviche is loaded with shrimp, avocados, tomatoes and cucumbers; all marinated in fresh lime juice. You can use cooked or raw shrimp in this Mexican shrimp cocktail.
