  2. Take 3 Tomatoes -
  3. Prepare 2 Red onions - medium size

Instructions to make Tomato bath:
  1. Wash and soak basmati rice upto 1/2 hour min or 1 hour maximum.
  2. Heat a pressure cooker, add oil, ghee. When hot add cumin seeds, bay leaves, curry leaves. When it splutters add sliced onions, a pinch of salt and stir well until it turns light brown.
  3. Add green chilies, stir. Then add Ginger garlic paste, sauté well unto raw smell goes off, add chopped coriander, mint leaves and stir well. Add kashmiri chilli powder, turmeric powder, garam masala and stir well in medium to low flame.
  4. Add the chopped tomatoes or you can even purée them, add salt as needed, cover and cook well till the tomatoes turn mushy. Add sugar and mix well. Cook for a minute. Drain the rice and add to the masala. Mix well.
  5. Add water 2:2 1/2 cups ratio, if adding fresh coconut milk add 2 cups of water +1/2 cup of coconut milk. If using coconut milk powder follow the water ratio and add the powder to the cooker itself. Make sure to mix them very well. Taste the water for salt.
  6. Cover the cooker, and cook for 2 whistles. Switch off the flame. Keep the cooker out off the stove or to unused burner on your stove. Let the pressure goes off. Open the cooker and flip rice with fork or wait for fewer minutes and mix well. Serve hot with onion raita.

Make sure tomatoes are fresh, firm and red ripe. Note: This canning whole tomatoes guide uses easy water-bath canning. You can certainly use a "canner" if you have one. OR, you can use a large deep stockpot with a flat bottom and lid. This lower temperature is safe for canning as long as the tomatoes are properly acidified.
