Ekuru is made from steamed blended dehulled beans, it is a tad bit similar to Moinmoin. Ekuru is traditionally eaten with Spicy Ata dindin (Fried Stew) and Eko Agidi.

Instructions to make Ekuru (white moin moin) and ata dindin:
- Peel beans and clean well add onions,a good amount,onions give beans good taste i discovered. Meanwhile but water in pot on fire,Blend to be very smooth with good consistency.now use your turning stick to stir for awhile,dont add salt or maggi or oil.now wrap ypu moin moin or put in a can anf place on fire
- Wash pepper,tatashe,shombo and onions and blend coarsely,place palm oil in a pot and heat it for like 3 mins…..add sliced onions add pepper mix..no tomatoes…fry stew till very dry,this is called ata dindin,add ypu maggi and salt for taste.serve ekuru with ata dindin stew.thank you
Repeat until ekuru mix is finished. Cover the wraps with some leaves or a plastic bag to keep the heat inside the pot. Then, cover with the pot lid and steam/cook on medium heat.
