Now add enough water to cover the vegetables. Kadai Vegetable is a spicy Indian gravy served as a side dish to Indian Flat breads. I have added Carrots, Green beans, cauliflower and potato. Mix and match vegetables of your choice to suit your.
Steps to make Kadai mix vegetable:
- Cut and chop all the vegetables and wash them properly.
- Meanwhile, heat oil in a kadai, add 2 chopped onions, 2 green chillies, and ginger and garlic. Saute them for a minute or two.
- Now add chopped tomatoes alongwith all the masalas except salt. Saute till the mixture get mushy and oil seprates.
- Now add all the vegetables, salt. Stir them on high flame for around 10 minutes..stirring in between so that they don't burn.
- After 7-8 minutes the veggies will be done..add garam masala and chopped coriander to garnish.
- It can be cooked on low flame too which will take 5-10 minutes more but cooking on high flame retain the nutritional value of the veggies..
- Enjoy them with chapatis or parathas.
