Steps to make Es Cendol/Es Dawet:
  1. For The Cendol : - - Fill a mixing bowl with drinking cold water and ice cubes. The colander you are using to squeeze the cendol needs to be slightly smaller than the mixing bowl. Set aside. - Place all cendol ingredients in a sauce pot and stir until mixed well. - Turn on the heat, cook and stir at all time, until it bubbles vigorously and thickened, imagine boiling hot mud. - Turn off the heat, transfer the thickened batter to a colander.
  2. Hold the colander so that it is right above the prepared mixing bowl with ice cold water. Then use a spatula to squeeze/push the batter through the colander. The batter needs to drop from the colander directly into the ice cold water, which will immediately make the cendol hardened and hold its shape. Set aside.
  3. For the Palm sugar syrup : - - Place all palm sugar syrup ingredients in a sauce pot and bring to a boil. Cook until all the sugar has dissolved. - Turn off heat, discard the pandan leaves, and strain to a clean jar/bowl.
  4. For the Coconut milk : - - Place all coconut milk ingredients in a sauce pot and cook until the coconut milk starts to boil. Turn off the heat, and immediately remove the pan away from heat source. - Discard the pandan leaves, and pour into a clean jar/bowl.
  5. Prepare three serving glasses. Pour some syrup, then add the cendol, and topped with coconut milk. - You can add either ice cubes or shaved ice, especially if you serve this immediately. Alternatively, you can chill everything first, then serve chilled without any ice cubes or shaved ice.
