- Microwave fish for 2 to 3 mins until cooked
- Mash Potatoes, fish, pesto and herbs together
- Cut cheese into appropriate sized cubes depending whether starter or mains and mould mash around pieces.
- Chill for 15 mins
- Roll fish cakes in flour, then egg and finally bread crumbs
- Fry cakes on either side for 2 mins and bake for 15 mins at 200c (fan)
- Mix Mayonnaise and Mustard to make sauce
