  1. Take 10 colocassia leaves (arbi ke patte)
  2. Get For besan mixture
  3. Take 2 cups gram flour
  4. Make ready 1 tbsp oil
  5. Get 20 Garlic cloves
  6. Prepare 2 Garlic julienne
  7. Get 7-8 green chillies
  8. Prepare 1 tsp cumin seeds
  9. Prepare 1/2 cup fresh Coriander
  10. Get 1/2 tsp red chilli powder
  11. Take 1/4 tsp turmeric powder
  12. Make ready 1/2 tsp cumin powder
  13. Prepare 1 tsp coriander powder
  14. Take 2 tbsp tamarind water
  15. Get 1 tsp sugar
  16. Take as per taste Salt
  17. Make ready as required water for steaming
  18. Take as required Oil for frying
  19. Get For Garnishing
  20. Prepare 1 tbsp sesame seeds
  21. Make ready 2 tbsp freshly grated coconut
Instructions to make Patra (Alu Vadi):
  1. Assemble the Ingredients required.
  2. For making patra, place a colocassia leaf with the vein side facing upwards on a clean dry surface and remove the vein using sharp knife. Now soak the leaves in clean water and prepare besan mixture.
  3. In a mixer jar add garlic, ginger, green chillies, coriander and cumin seeds and grind well. Now add salt and sugar and make a fine paste.
  4. In a bowl add gram flour, salt, red chilli powder, turmeric powder, cumin powder, coriander powder. Now add this prepared paste,oil & little water and mix well.
  5. Now add tamarind water and you will get this smooth fine thick consistency.
  6. Pat dry the colocassia leaves using a cotton or muslin cloth. Place the light green side of leaf facing upside. Now spread this besan mixture evenly using fingers.
  7. Now place second leaf similarly and repeat steps till the fifth leaf. On top again spread besan mixture evenly
  8. Now fold the leaves from both sides and start rolling up from bottom to top and again cover it with besan mixture.
  9. Place both the rolls on the steamer and cook for 25 to 30 minutes. You need to coat the steamer with oil so the rolls doesn't stick to the surface.
  10. Once it's ready it will be firm like this and color will be dark green. Let it cool for 10 minutes.
  11. Heat the oil for frying, cut the rolls into 1/2 inch thick slices and deep fry it on medium flame.
  12. It's ready to serve just garnish the patras with sesame seeds, grated coconut
