To make besan ladoo (pronounced BAE-sen la-DOO), besan, or chickpea flour, is cooked in ghee until it is very fragrant and darker in color. Then, powdered sugar and any seasonings or add-ins (like golden raisins) are mixed into the flour. But you can find generous use of lentils, legumes and nuts (Remember peanut laddo ?) in each variety of laddo. Since the legumes and nuts are nutrition rich and such sweet things can be kept for long, they become ultimate after-school-snack for kids.
Instructions to make Chickpea laddoo (chana laddoo):
- Grind chana into a fine powder and seive it.
- In a hot kadhai roast chana powder for 3-4 minutes, and then add it to a bowl.
- In the same kadhai add ghee and hot it. Add roasted chana in ghee and mix it well for 3-4 minutes. Continuously stir it.
- Switch off the flame. Now, add powdered sugar or boora. Mix well again with spoon. (you can increase or decrease the sugar quantity according to your taste).
- Make sure that there are no lumps in the mixture. To make the ladoo out of this mixture grease your palms with few drops of ghee. Take a small portion of mixture in your hand and press it with both hands. Then shape it into a round ball.
- Press it hard so that it does not tear apart while picking it up. Chana laddoos are ready to eat. Store it in air tight container. Enjoyyy…
Besan ladoo is a festive sweet which is easy and quite tasty. To make laddu you need besan flour /gram flour or chickpeas flour. Besan is roasted with ghee till it is nicely toasted and light brown. Then sugar is added and shaped that is shaped into balls called laddu. Delicious besan ladoo, sweetness chickpea flour balls made with besan, sugar and spices like cardamon and saffron.
