Instructions to make Butter naan with Paneer Makhni:
- Add flours to a plate,1 tsp kalonji seeds and all the other ingredients leaving the chopped coriander.
- Mix well to a soft dough. Cover and rest for 30 minutes.
- In the meanwhile prep for the makhani. Slice onions,chop the tomatoes,soak the cashews in a cup of water.
- Heat a tsp of oil and a tbsp of butter in a sauce pan. Saute the sliced onions,garlic, ginger,green chilli saute till onions are translucent
- Now throw in the tomatoes,cover and cook with little salt till mushy.
- Open,let cool completely,grind to a smooth paste along with the soaked cashews.
- Heat 2 tbsps oil in a sauce pan. Add the whole spices and saute. Now add the puree and spice powders. Add a cup of water.Cover and cook fir 10 to 12 minutes
- Crush the kasuri methi and add. Adjust salt and sugar for seasoning. Throw in the cubed cottage cheese. Simmer for 5 to 7 minutes.
- The paneer makhni gravy is ready. Now heat a tawa.Pinch large balls from the covered dough.roll between your palms.
- Keep the kalaunji seeds and chopped coriander ready in 2 different bowls.
- Keep a small bowl of water ready. Take a ball roll on a dusted platform into oblong shape keeping it little thick. Now sprinkle little kalonji seeds and coriander.
- Roll press with the rolling pin.remove with your right hand and invert in your left hand. Apply water generously all over spreading with your four fingers.
- Now invert again on the hot tawa.
- Let bubbles be seen on top
- Now invert the tawa on direct gas on high flame.let it roast slightly.
- As soon as roast is seen all over flip again. It will be stuck to the tawa.remove with a flat spatula on a plate. Apply butter immediately all over. Delicious Naan is ready to serve
- Serve the butter naan with it's mate,paneer makhni. Absolutely divine.
