Bhai Dooj, Bhaubeej, Bhai Tika, Bhai Phonta is a festival celebrated by Hindus on the second lunar day of Shukla Paksha (bright fortnight) in the Vikram Samvat Hindu calendar or of Shalivahan Shaka calendar month of Kartika. Celebrated on the last day of Diwali - Bhai Duj is a festival that occurs during the Hindu month of Kartika. Instructions to make Bhaiduj platter:
- Shahi Tukda~ Fry the sandwich bread in ghee in medium flame and dip in sugar syrup. Smear the kheer on top of the bread and add crushed dry fruits as a topping.
- Kheer Chhena ~ Make a dough of chhena. Apply oil/ghee over your palm. Cut in small chhena balls and deep fry in medium flame. Dip the balls in sugar syrup for 5 mins. Then decorate the chenna balls with toppings of kheer and crushed dry fruits.
- Fish kebab~ Mix Rui fish(boiled), Rui fish(boiled), ginger, garlic paste, jeera powder, dhania powder, garam masala, salt, pinch of sugar (for taste), turmeric powder, and red chilli powder properly. Apply some oil on hand and cut the mixture into balls in kebab shape. Dip the kebabs in egg mix and dab with bread crumbs. Deep fry the kebabs in oil. Sprinkle salad as toppings over the top of the kebabs.
- Cholar Dal~ Fry bay leaf, dried chilli powder with oil. Add garlic paste, hing, jeera powder, dhaniya powder, sugar, salt, turmeric powder into boiled dal and fry in medium flame for 5mins. Add garam masala and cashew and raisins as toppings.
- Chocolate milkshake ~ In a jar take 1/4 cup warm water. Add 2-3 spoons cocoa powder. Then add 1/4th cup sugar (as per taste recommended). Mix very well and then pour the mixture into a blender or mixer. Add some ice cubes and 2.5 cups of milk. Blend till smooth. Then add a scoop of chocolate ice cream. Pour into individual glasses and dip chocolate (dairy milk) as topping from the sides.
- Alu paratha ~ Boil the potatoes and mash them. Add chopped onions, green chill, salt, garam masala powder, chaat masala and mix well so that no lumps remain. Put wheat flour in bowl. Add water gradually and knead into soft dough and roll them out in 3-4 inches circles. Add a spoonful of potato filling in the center. Gradually press the rolling pin on all sides while making the parathas. Be very careful to apply pressure evenly. Seal the dough and fry them by brushing ghee.
