- केसर की लड़ियों को कूट लें और आघा कप पानी मे घोल लें। धीमी आंच पर कड़ाही रख लें। अब कड़ाही में घी डालें ।
- एक दुसरे बर्तन में चीनी और पानी को लें और मध्यम से तेज आंच पर रखें और उबाल आने दें। उबलते हुए पानी में केसर का घोल डालें।
- जब घी गरम हो जाए तो सूजी डालें और चलाते रहे।अब इसमे काजू और बादाम के टुकङे डाले और चलाते रहे।
- जब पानी चीनी का मिश्रण उबलने लगे तो आंच को धीमा कर लें। जब सूजी के दानों का रंग बदलने लगे और काजू बादाम भी हे सुनहरे रंग का हो जाए तब उबलते हुए चीनी-पानी के घोल को मिलाए।
- सूजी के मिश्रण को जल्दी करछी से हिलाते रहें जब तक मिश्रण गाढ़ा ना हो जाए और पैन के किनारों को छोड़ने ना लगे।
- हलवा को किसी ढक्कन से ढकने के बाद किसी भारी चीज़ से ढक्कन को दबा दें।गैस बंद कर दें और रवा केसरी को 5-6 मिनट तक स्टीम (steam) होने दें।
- अब ढक्कन हटा दें और कटे हुए मेवे से सजा कर गरम या ठंडा रवा केसरी परोसें।
- Tips: रवा केसरी का सवाद बढ़ाने के लिए आप इसमे दूध का उपयोग भी कर सकते है। - - सूजी, घी, चीनी, पानी की नाप के लिए एक ही नाप का कप इसतमाल करे।
