- Take 1-cup sugar, 3 green cardamom pods, 1½ cups water and 1-2 drops of lemon juice in a deep pot or pan. Lemon juice is added to prevent syrup from solidifying when it cools.
- In a bowl add khoya, flour, semolina, baking powder and cardamom powder. Mix all these ingredients well.
- Shift the mixture onto the rolling mat and knead with your palm. - Add lukewarm milk to knead smooth and soft dough if required. - Divide the dough into two halves and then further into ten equal and make small balls.
- Heat oil in a pan, over medium flame. Add prepared dough balls and fry them over low to medium heat for 6 to 7 minutes or until light golden brown.
- Add fried balls into warm sugar syrup (not hot syrup) otherwise they’ll shrink. - Soak them for at least one hour. Serve hot or cold.
