The ingredients needed to make Rice kheer:
  1. Make ready 1.5 ltr full cream milk
  2. Make ready 1/2 cup basmati rice

  5. Prepare 15 chasew
  6. Prepare 2 tbsp raisins
  7. Make ready 1 tbsp chirongi
  8. Make ready 1/2 tsp green cardmom powder
  9. Make ready 8-10 string safron

Instructions to make Rice kheer:
  1. Soak almonds in water for 3 hr. Thn Peel thm and chop in thin slices.Chop the cashew. Soak safron in 2-3tbspoon milk.
  2. Wash rice only once it's very important as we need all the starch of rice it will help in thicking the kheer naturally. Than soak it atleast for 30 minutes.
  3. In a heavy bottam pan parboil(50%) rice with the help of water. Now time to add milk. It should be on room temperature and there should be atleast 1 cup water in pan whn u start adding milk. Flame should be low at this time and it should be satire in between to avoide sticking in the bottom.
  4. Now add soaked sefron and nuts. After 10 minutes add sugar and Cook it atleast 40 minutes on low flame now it will start thickn. Do not over cook it otherwise after getting cooldown it will become paste.
  5. After 30 minutes of switching flame add green cardmam powder. It's important for the aroma of cardmam.
  6. Serve it eighter hot or chilled. It totally depended on ut taste. Taste great in both form.
