Steps to make Veg Pulav with Cucumber Raita (Pulav Prepared in Pressure Cooker):
- Heat a pressure cooker. Add ghee/ oil, fry cashew nuts, raisins & keep them aside. Now add 1" cinnamon, cloves (4nos), cardamom pods (4nos), Bay leaf (1) and fry it slightly, now add finely chopped onion (1) & saute well till it becomes translucent. Now add 3 chopped green chillies, ginger garlic paste, saute it, add turmeric powder (little), red chilli powder (little), garam masala powder, saute it.
- Add 1 chopped tomato & saute it. Add vegetables (green peas, chopped beans & carrots) & salt (As required). Now add water (for 1 cup rice 1 & 3/4 cup water).
- When water begins to boil add washed & drained 1 cup rice (small variety jeerakasala rice used for this preparation). Close the lid. Cook upto 3 whistles.
- Garnish with previously fried cashew nuts, raisins & chopped coriander leaves.
- Serve this Pulav with cucumber raita.
- Cucumber Raita: - Wash & peel the skin of cucumber. Chop/ grate it. In a bowl add curd, chopped green chillies (2), salt (to taste) & grated cucumber. Mix well.
