The ingredients needed to make Pineapple Sheera/Kesari:
- Prepare 1 cup Semolina
- Prepare 1/2 cup Sugar
- Prepare 8-10 Saffron Threads
- Get 1 tbsp Green Cardamom Powder
- Take 10-12 Cashews
- Take 8-10 Raisins
- Get 1 cup Pineapple Chunks (preferably tinned)
- Prepare 2 cups Water
- Take 100 gms Pure Ghee
Pineapple kesari is a popular sweet made in South India, especially in marriages and functions. Very easy to prepare but the taste and flavour is mind blowing. I am a great fan of pineapple kesari. Pineapple sheera is an Indian pudding made with semolina, sugar, dry fruits & pineapple Sheera - heavy duty with ghee, raisins and nuts with bits of pineapple chunks was always such a delight to eat.
Steps to make Pineapple Sheera/Kesari:
- Heat 2 tsp ghee in a pot. Fry Cashews until lightly golden.
- Then add raisins and fry until they turn plump. Remove them to a plate and keep aside.
- Add rava or suji and fry on a medium heat until it turns aromatic. Do not brown the rava. Transfer to a plate and set aside.
- To the same pot, add 1tsp ghee and pineapple. Saute for 2-3 minutes.
- Add sugar, water and bring it to boil along with Saffron.
- . When the water begins to boil, slowly slowly add suji to the pot stirring constantly to prevent the mixture from turning lumpy. Add Cardamom powder. Stir well.
- Lower the flame. Cover and cook until all water evaporates. If desired add more ghee. Cook for 2 to 3 minutes on a low flame.
- Switch off the flame and keep covered for 2 to 3 minutes.
- Serve Pineapple Sheera or Kesari hot or Warm.
