- Pressure cook all the vegetables for 1 whistle.
- Heat oil in a kadai and splutter mustard seeds.
- Add finely chopped onion, finely chopped green chilli, curry leaves, crushed fennel seeds and ginger garlic paste.
- Saute well until the onion become light brown in colour.
- Add turmeric powder, red chilli powder, coriander powder and garam masala.
- Saute for few minutes.
- Then add chopped tomato and cook till the tomato becomes soft.
- Add cooked vegetables, water as per your consistency and salt.
- Mix well and cook it for 5 minutes in medium - low flame.
- Add coconut milk and switch off the flame.
- Garnish with some coriander leaves.
