Dal Tadka,a North Indian dal recipe,is a Dhaba style favorite food of mine. Hot pulka and dal tadka is our standard vegetarian meal on many of our road trips. Tadka Dal is a popular Indian dish made of red lentils and tempered with aromatic spices. Tadka refers to "tempering" and Dal is "lentils" in Hindi language where the tempering acts like a garnish in this.

Steps to make Dal tadka:
  1. Soak dal for half an hour. Wash it well.
  2. Boil 6 cup water in a pressure cooker.After a boil,add 1/4 tsp turmeric powder,green chillies & dal which was soaked,first drain the water out of it.
  3. Cover with lid & give 3 whistles When the pressure is gone, open the lid,The dal is cooked.Now add 2 tsp of pure ghee & mix well.
  4. Heat oil in a pan with bayleaf.When it heatsup,add chopped onions & cook till they become brown.
  5. Now add ginger garlic paste & cook till aroma goes away,add turmeric powder,red chilli powder,coriander powder.Mix well & stir.
  6. Add kasuri methi & roughly chopped tomatoes.Stir,cover & cook for 5 minutes.
  7. After 5 minutes,remove the lid,tomatoes become mashy.Add amchoor powder & garam masala,stir well.
  8. Add this to cooked dal.Mix well &switch of the flame.cover it with the lid.
  9. For tempting or tadka:heat 2 tsp of ghee in a pan.When it heats up add chopped garlic cloves & stir for a second.
  10. Add1 tsp of cumin seeds,when it crackles up,add 2 whole red chillies,hing & switch off the flame. Add few chopped coriander leaves.
  11. Add this tempting to the Dal.The dal is ready to serve with hot chapati.
