Aval Kesari or Avalakki Kesari Bath or Atukula Kesari is a South Indian style dessert made with beaten rice, sugar and ghee. This can also be served as a dessert or sweet snack on any occasion. Make sure the poha or aval is fully cooked before you add sugar to attain soft texture. If I had to name one striking difference between my mother and I, then it would be our liking for sweets/desserts.
Instructions to make AVAL KESARI (Sweet Poha):
- Take a cup of poha and wash it well.
- Take a pan, use one tbsp of ghee and roast the cashew and almonds. Keep it aside.
- Now in the same pan saute the poha for a few minutes. Keep it aside.
- Pour water into the pan and add saffron or kesari powder (if you do not have both then you can add turmeric powder) and let it boil.
- Now add the poha, stir it till the poha gets thick.
- As it thickens, add the sugar.
- Now the stir the kesari till it gets a little thick.
- Add a tbsp of ghee and mix it well.
- Garnish with almonds and cashew.
