Dal makhani or dal makhni is a popular dish originating from the Punjab. The primary ingredients in dal makhani are whole black lentil with red kidney beans. Punjabi Toor Dal Tadka and rice is the ultimate comfort food and it is made with basic ingredients found in every Indian home. Dal Tadka is a North Indian recipe made from Toor Dal & gets its distinct taste from a flavorful & aromatic tempering of Ghee, Cumin Seeds, Heeng & Red Chillies.
Instructions to make Punjab dal tadka:
- Wash the dal and soak for about 10 mins. In a pressure cooker add green chilli, ginger, dal, water, asafoetida and turmeric. Cook for about 3 whistle. Once pressure is released, just give a stir with spoon.
- Take a pan, add oil. One oil is hot add jeera and wait to splutter. Add chopped onions and once it's golden brown, add chilli powder and give a mix. Then add chopped tomatoes and cook for about 3 mins. Now transfer the masala to mashed dal and bring to boil for 5 mins and transfer to a bowl.
- In a pan add ghee, once ghee is hot add jeera, dry chilli, chilli powder and garlic, once aroma is relased add the tadka to dal and close the lid for 5mins. Now enjoy the dal warm with rice and roti.
- Note: This is one of the variety of Punjabi dal. Same can be made by mixed dal as well. After last tempering do not boil the dal.
