  2. Prepare 5-8 tbsp ghee
  3. Make ready 2 cups chopped nuts & dry fruits
  4. Take A few crushed cardamoms
  5. Take 2-3 cups finely chopped pineapple
  6. Get 4-6 cups sugar
  7. Take 3 tbsp sunflower oil
  8. Take 3 cups water
  9. Take 1/2 tsp yellow food colour /Kesar powder
  10. Make ready 1 tsp Pineapple liquid essence
  11. Get 2 tsp cardamom powder (optional)
Steps to make Pineapple Rava Kesari/ Pineapple Sooji Halwa:
  1. Dry roast the rava on a medium flame until it becomes hot to touch.
  2. Remove the rava from pan. Add 1 & 1/2 cups ghee and let it melt.
  3. Add the roasted rava into the pan with ghee. Ghee will get absorbed into the rava quickly.
  4. Roast on medium flame till rava turns brown.
  5. Add the chopped pineapple and mix well.
  6. Bring to boil 3 cups of water. Add to it 1/2 tsp yellow food colour/ kesar powder and 1 tsp pineapple essence.
  7. The water is then added to the rava. Once mixed well let all the water evaporate. Stir continuously on low flame or the rava forms clumps.
  8. Add the sugar and mix well. Sugar will release water by itself. Wait for it to get absorbed into the rava. The more sugar you add the better will be the consistency of Kesari.
  9. Roast the nuts, dry fruits & cardamom in a tbsp ghee for 2 mins.
  10. Add the fried dry fruits to the Kesari. Add the remaining ghee and give a good mix on low flame. Can add the cardamom powder now as well (optional)
  11. Garnish with chopped pistachios and raisins. Serve hot with a scoop of chocolate/vanilla icecream.
