- In a non stick pan dry roast poha for few minutes till it is light brown in colour. Do not over roast it.

- Heat 1 tsp ghee in a pan and fry the cashews and raisins till nice golden brown.
- Once done take it out on a plate and keep aside.
- Heat water in a pan and bring it to boil.
- Add the roasted poha powder and mix well so that no lumps are formed.
- The poha will be cooked completely when the water is absorbed.
- Now add powdered sugar and stir continuously.
- Add orange food colour, cardamom powder and mix it well.
- Add ghee and keep stirring till the kesari becomes a whole mass without sticking to the sides of the pan.
- At last add cashews and raisins, mix well and switch off the flame.
- Serve hot and enjoy delicious Poha Kesari.
