  2. Make ready 100 gm chickpeas(Kabuli chana)
  3. Make ready as needed water

  7. Make ready 1/2 teaspoon red chilli powder
  8. Make ready 2 teaspoon chhole masala

  14. Make ready 1 pinch Asafoetida
  15. Prepare 1 inch cinnamon stick

  18. Get 1 tsp cumin seeds
  19. Take 2 cardamom
  20. Take 4-5 clove
  21. Prepare 2 mace
  22. Make ready 4 tablespoon Tamarind water
  23. Take 1 tablespoon Coriander leaves
  24. Prepare For Bhature
  25. Get 250 gm Maida(plain flour) -
  26. Make ready to taste Salt
  27. Get 1/2 teaspoon sugar
  28. Take 1 teaspoon Carom seed
  29. Take 3 tablespoon Plain curd
  30. Get as needed Water
Instructions to make Chhole Bhature:
  1. For Chhole - Soak chickpeas in water for 8 hours.
  2. After 8 hours,in a pressure cooker take 1 and half cup water,half teaspoon salt and soaked chickpeas.cook for 5 whistles.
  3. In a bowl take coriander power,turmeric powder,red chilli powder,chhole masala, add some water and soak all spices.
  4. In a grinder jar take green chilli,ginger,garlic,onion and finely grind all.
  5. In a pan take 2 big spoon oil,add dried spices and saute them.
  6. Add grinded paste and cook for 5 minutes(until onion paste changes colour)
  7. Once cooked add soaked spices,asafoetida and salt(remember we alreaded added some salt while boiling chickpea).Cook until oil separates.(Add some water in between if it stick to pan).
  8. Once cooked add boiled chhole and cook for 5 minutes.
  9. Add tamarind water and cook another 2 minutes, garnish with coriander leaves and serve hot with bhature or chapati.
  10. For Bhature - Mix maida,salt,sugar,carom seed and curd and knead soft dough using water.Let dough rest for 30 minutes.
  11. After 30 minutes take few oil drops in hand and knead dough again for 2 minutes.
  12. Make small dough ball, roll it like poori.
  13. Heat oil and deep fry bhature until golder brown.
