Tried it today but I used the mixie instead of the wet grinder and split urad instead of whole and didn't add water while grinding. Steps to make Medhu vada (urad dal vada):
- Soak the Urad Dal for 1-2 hours and keep aside
- After 2 hours grind the soaked Urad Dal along with the Green Chillies in the mixer finely (with less water). The batter should not be watery.
- Remove the batter in a bowl. ADD : Salt as per taste, Hing Powder, Cut Curry Leavesa and Corrainder Leaves and Pepper Corn Powder. Mix well. In the meanwhile heat oil in a Kadai.
- Cut the Amul Milk packet into a square shape (plastic sheet). Brush water on it. Soak your hand in water and then take little Vada batter and put it on the plastic sheet and put a hole in the middle. Lift the plastic sheet with left hand so that the Vada is in the right hand fingers. Slowly put it in the oil for frying.
- Fry on both sides. The Medhu Vada should not be very brown (otherwise it will become hard). So remove it accordingly when it is light brown. Please put in on Tissue paper so that excess oil is removed.
- Medhu Vada is ready. Serve hot with Coconut or Coriander Chutney or Tomato Ketchup
Medu vada or vadai is a traditional favourite of South India that features not just in everyday cuisine, festivals and puja days. Here vada refers to Uddina vada medu vada, a crispy, fluffy fritter tasting heavenly with chutney and udupi sambar. Drain all the water from soaked urad dal and grind it along with salt, green chilly in to smooth fluffy mixture. It is better to use wet grinder for grinding.
