- Soak Chana / Toor Dal in water for 2 Hours. Drain the water completely. Make sure that the water is dried well. Pat dry using with a clean kitchen towel.
- Heat a pan with oil for deep frying.(If you want authentic taste, use coconut oil).When oil is really hot add in the Vada. Fry the vada tills golden brown on both sides.
- Crush the Dal in the small jar of mixie or food processor without adding any water. Make sure you don't grind it to a smooth paste.
- Transfer the Dal to a bowl. To this add in chopped pearl onions, green chillies, curry leaves, coriander leaves, dried red chillies, ginger, asafoetida powder, fennel seeds, salt. Mix everything together.
- Make small balls (lemon sized balls) from the Dal mix and flatten them with your palms, like Vada.Deep fry them.
