This lentil fritter is also known as Moong Dal Bhajiya in northern parts of the country while Daler Bora is a known name in East Indian regions. Moong Dal Pakoda is a North Indian snack which is mostly made during festivals in most of the households. It is a kind of fritter which is made with moong dal batter, onions and a lot of spices to compliment the sweetness of the desserts during festivals.

- Drain off the water from soaked moong dal and blend to smooth paste adding 1/4 cup water.
- Transfer the prepared moong dal batter into bowl.
- Add in 3 tbsp rice flour for crispy vada. add more rice flour if required to get thick batter.
- Now, add 2 green chilli, 1 inch ginger, 2 tbsp onion, 2 tbsp coriander, 1 tsp jeera and 1/2 tsp salt. mix well.
- Now add 1/4 tsp baking soda and give a good mix.
- Now dip your hand in water, and start dropping them one by one to hot oil.
- Keep the flame in lower to medium stir occasionally.
- Fry the vada till they turn golden brown.
- Drain off the vada on to kitchen towel to absorb oil.
- Serve moong dal vada with coconut chutney or tomato sauce.
Drain and grind it with green chilli and ginger to a smooth paste. I like to chill my soaked vada slightly before serving. Best to have it chilled in this summer too!
