  1. Rinse the dal with water a couple of times
  2. Soaks the dal in one cup of water for exactly 2 hours. Do not exceed the time.
  3. After two hours, drain the dal well so that no water is left behind and grind to a coarse paste without adding water. A few whole dals should be left. This helps with the texture
  4. To this mixture add chopped onion, ginger, coriander leaves, curry leaves, chopped green chilli and salt to taste. You can also add red chilli powder of required. I did not add in mine
  5. Mix well so everything is combined. Taste the mixture and add salt or chilli powder of needed.
  6. Divide the mixture into small portions and flatten then slightly by hand or using banana leaves
  7. Heat oil and in a pan
  8. Fry the shaped vadas over medium heat till golden brown or till cooked.
  9. Serve hot with peanut or coconut chutney.
