- Get 1 tsp Sesame Oil
- Make ready 10 g Ginger (minced)
- Make ready 10 g Spring Onion (white part, minced)

- MARINADE; Marinate the chicken with 1/2 Salt for 30 minutes or more.
- STOCK; Add in a stock pot, Water, Stock Cube, Salt, Ginger and Spring Onion. Bring it to a simmer.
- CHICKEN; Poach the Chicken in the stock for 10-15 minutes. Check the doneness by poking the thickest part with a skewer and test if it is hot. Remove rest the chicken for 10 minutes. After 10 minutes, slice the chicken and optionally, brush the chicken with Sesame Oil.
- RICE; In another pot, heat the butter on low heat until hot and saute the Garlic until fragrant. Then add the White Rice and toss well. Next add 1.5 cup of Stock and cook until done. When the liquid has evaporated completely, comb the rice with a fork and let it sit for 10 minutes.
- ASSEMBLY; Serve the rice and chicken on a plate, with the slice cucumbers and ginger soy vinaigrette. Garnish with Spring Onions. The stock can be discarded, or you can serve it as soup.
