- Take 100 g butter

- Heat oven to 200c / gas 6
- Put tomatoes in roasting tin, drizzle with oil and season. Roast for 20 mins. Remove to cool.
- Fry bacon. Leave to cool then chop.
- Make the pastry: In a food processor pulse the flour and butter until fine crumb. Add a little water while processing, 2-3 tbsp. Add 1 egg yolk. Mix until dough is formed, don’t over process. Remove the dough, press into a ball and wrap in cling film. Put in fridge to chill for 30 mins.
- Lightly dust worktop with flour. Roll out the dough into about the thickness of a lasagne sheet. Line each tartlet tin with pastry by cutting a circle slightly larger then the tins. Press pastry into the edge and run the rolling pin over the tops of the tins to trim the pastry. Re roll the off cuts of pastry until you have lined all the tins.
- Brush tartlet cases with egg white, this creates a seal to protect the pastry from becoming wet from the filling and ensures a crispier pastry case.
- Filling: In a large bowl mix together the filling ingredients. Beat together the remaining eggs and add to the bowl. Once combined carefully pure the filling into the tartlet cases. Grate a little extra cheese on top.
- Bake for 20-25 mins. Until golden and puffed up. Allow to cool then chill in fridge until ready to serve.
