- Wash and clean lemons. Now cut the lemons into 4 slices. Don't separate the ends. Now take red chilli powder and sea salt and fill in the lemon.
- Like this prepare all the lemons and store in a sterilized glass jar. Store in a cool place away from sunlight.
- Now for 15 days shake the jar properly the lemons should get mixed well. Boil vinegar and add jaggery into it. Let it boil until the jaggery melts. Let the mixture come on room temperature and add in the jar on the 15th day.
- Really juicy, tangy and easy lemon pickle is ready.
It goes great with lentils, curries, vegetable biryani, rice, stuffed flatbreads and naan. While making pickle, make sure the container, spoon, jar are all completely moisture free otherwise the pickle will be spoiled.
