Thandai is an Indian drink made with milk, nuts and spices like saffron, fennel. It's served especially during festival of Holi and is very refreshing. This fresh, homemade Thandai tastes absolutely heavenly, far superior to the readymade mixes available in the market.
To get started with this particular recipe, we have to first prepare a few ingredients. You can have thandai using 10 ingredients and 24 steps. Here is how you cook it.
The ingredients needed to make Thandai:
- Make ready 1 bottle for one bottle (concentrated)
- Prepare 40 almonds
- Prepare 40 pepper corns
- Get 40 green elachis
- Get 2 tbsp khus khus
- Take 2 tbsp jeera
- Prepare 5 cups sugar
- Prepare 4 cups water
- Take 1 serving spoon milk
- Prepare Little saffron /kesar soaked overnight

Instructions to make Thandai:
- Wash and soak almonds overnight.
- Peel the almonds.
- Grind all the ingredients.
- In the last grind khus khus…..as it becomes bitter if kept for a long time.
- In a heavy bottomed vessel ; combine sugar and water.
- Mix well.
- Keep on high flame.
- When sugar melts completely ; add 1 tbsp of milk and mix.
- Once it starts boiling ; dirt will settle up ; remove and throw it.
- Add all the grinded paste and mix well.
- Be careful ; it takes few seconds to boil.
- Keep on slow flame for 15mins.
- Again on high flame for 10 mins.
- Mix well ; close the flame ; cover and keep it overnight to cool.
- Next day ; strain the Thandai and do the bottling.
- Don't throw the residue.
- Keep it aside.
- Grind Kesar.
- After bottling add little kesar to each bottle.
- Close the cup / lid of the bottle and keep in cool place.
- How to make Thandai from the residue.
- Add 2-3 glass of milk ; strain ; add ice cubes and serve chilled.
- How to serve this concentrated Thandai….
- In one glass of cold ; milk ; add 2tbsp of Yhandai syrup ; ice cubes and serve chilled.
Bhang Thandai or Bhang ki thandai is a mildly intoxicating beverage prepared with the flower heads and buds of cannabis. Her thandai recipe was a hit in the neighborhood, and everyone just loved it.
