To begin with this particular recipe, we must first prepare a few ingredients. You can have thandai and gujiya using 10 ingredients and 25 steps. Here is how you cook that.

The ingredients needed to make Thandai and Gujiya:
  1. Get 1/2 litter milk
  2. Prepare 2 tbsp sugar
  3. Make ready 5-6 Almond
  4. Make ready 10 Cashues
  5. Get 5 to 6 Pistachios
  6. Prepare 2 tbsp poppy seeds
  7. Get 1/2 tsp Elaichi powder
  8. Take 2-3 big elachi
  9. Prepare 2 saffron strands
  10. Prepare 1 tbsp black pepper corns

Steps to make Thandai and Gujiya:
  1. 1st blanch the almond, pistachio,cashew nuts,black pepper, big elaichi and poppy seeds.
  2. Add 1/2 cup of milk and grind the mixture into the fine paste.
  3. In a heavy bottom saucepan add milk and saffron. Boil it.
  4. When the milk begins to boil add sugar and spicy mixture already prepared
  5. Simmer stirring constantly.
  6. Cook for 6 to 7 minutes.
  7. Turn off the heat. Let it cool and refrigerate.
  8. Pour the thandai in a glass serve chilled.
  9. Gujiya recipe
  10. 2cup flour
  11. 1cup rava
  12. 1tbsp ghee
  13. 1pinch soda
  14. 1cup Blanched dry fruits roasted, like almond,coconut,pistachio,cashew and kishmish.
  15. 1cup khoa.
  16. 1cup sugar.
  17. Mix the blanched dry fruits sugar and khoa.
  18. Cook for few minutes until the sugar dissolves and mix well.
  19. Keep aside.
  20. Now make a dough with flour, ghee,soda and water.
  21. Now make small balls out of the dough.
  22. Now roll the balls in to puri shape.
  23. Stuff the puri with the mixture already prepared and pack it with design.
  24. Fry it in low flame untill it gets golden brown.
  25. Now dip in sugar syrup and serve.
