  23. Take 1/4 cup curd / yogurt
  24. Take 1 tsp kasuri methi / dry fenugreek leaves
  25. Make ready 3/4-1 cup water, adjust to required consistency
  26. Take few coriander leaves, finely chopped

The baby potatoes are first deep fried, then cooked slowly at low flame in a gravy with spices. Aloo Dum is an exotic delicious main dish. Just the smell of aloo dum can make you hungry! To make this dish, potatoes are fried and then soaked in the spicy aromatic gravy.

Steps to make Dum aloo:
  1. In a kadai, add a tsp of oil along with cumin seeds.
  2. Once they splutter, add prepared masala paste and fry for 5-6 minutes.
  3. Now add spices like chilli powder, turmeric powder, coriander powder, cumin powder and salt to taste.
  4. Continue to fry till oil separates. - turn the flame to low and add curd give a good mix.
  5. Add 1 cup of water or as required to adjust the consistency. - finally, add fried aloos and cook for 20 min.
  6. Lastly,add some crushed kasuri methi. - garnish with coriander leaves and serve dum aloo hot with rice, chapathi or naan.

I wanted to try Dum Aloo recipe for so long,but never happened. Each time when I buy small potato,I end up in making other small potato recipes like small potato curry or small potato biryani.
