The ingredients needed to make Ripe Plantain Pudding:
  1. Make ready over ripe plantain
  2. Prepare Palm oil or fresh palm nut juice
  3. Prepare Pepper
  4. Take Plantain flour
  5. Prepare Crayfish(optional)
  6. Get Seasoning cubes(optional)
  7. Take Salt
  8. Get Plantain leafs or uma leafs
  9. Take empty tins in the absence of leafs
Instructions to make Ripe Plantain Pudding:
  1. If you're using fresh palm fruit as the bas, boil and pound it to sieve put the juice for later use.
  2. Peel the ripened black Plantain and blend or pound until smooth.
  3. Mix the blended Plantain, Plantain flour, blended peppers, crayfish in a bowl.
  4. If you're using palm fruit juice add 3 cooking spoin it to the plantain mix and stir to get a thick l, not watery paste.
  5. If using palm oil, add 3 cooking spoon to the plantain mix. Add water to the mix and stir thoroughly to combine.
  6. Add seasoning cubes and salt and stir to combine..
  7. Wrap the Plantain pudding with washed clean Plantain leafs or Uma leafs. Or cook in small cans.
  8. Line the pot with plantain leafs and steam the wrapped pudding for 1hr
  9. Best eaten warm
