It is lentil cake made using chana dal which is traditionally fried and simmered in a satvic gravy i.e. a gravy without onion and garlic. This recipe is called Dhokar Dalna. Steps to make Dhokar dalna:
- Grind soaked dal in grinder adding salt and green chilli, and set near to the oven. Put little oil to the heated pan add ginger, jeera, hing saute till translucent.
- Now put coarsely ground dal to the pan saute and add pinch of turmeric powder mix well, add coconut mix, saute until the gravy becomes thick and moistureless, and keep it to the bowl. and make dhokla dough in cylindrical shape, you can make it square shape, but I have chosen it and shallow fry all dhoka dough.
- Now put ghee and oil to another pan when it perfectly boiled put bay leaves, jeera mace, cardamom, cloves cinnamon, when it translucent Put chopped tomatoes saute for three to four minutes add turmeric powder, red chilli powder and keep close with the lid, and check the tomatoes are well cooked.
- Now put jeera dhaniya powder and mix add garam masala powder,add milk powder saute for more minutes,add soya sauce and mix add Kashmiri red chilli powder and mix again and keep sauteing till the gravy becomes thick and leaves oil from the gravy, Now put water boiled for more minutes again when gravy is nicely done put above the fried dhoka.and keep rest for few minutes and check dhoka absorb the gravy and it's looking great.
