- Take a bowl add flour, ghee and incorporate it nicely with your fingertips till it resembles breadcrumbs.
- Divide the dough into 3 equal portions and add the red and green and yellow food colouring in each portions and knead it with luckwarm water properly so that the colour gets incorporated making it a green red and yellow coloured dough.Keep covered for 10minutes.
- After 10 mins roll out all 3 doughs into 8" roundels, keep all the 3 roundels on top of each other, alternately brushing each roundels with milk and dust Thandai powder on it before positioning it on top of the other according to the colours you want in your swirl .
- Roll it out together into a 10" roundel. Roll carefully into a cigar shaped roll brushing a little water at the ends. - Finally cut the roll into thin slices. And lightly press with palm and give a mathri shape.
- Meanwhile heat the refine oil for frying in a wok, fry the mathri slices 5-6 together in a medium sized wok for 5-6 minutes in medium low flame till they are cooked properly.
- Take a pan add sugar and water. And put the pan on gas stove to boil. cook the syrup for 5 to 6 minutes 2 make one string sugar syrup..
- Once it cool down a bit then add fry mathri in sugar syrup.
- And then take it out and keep on a plate.keep all mathries on a plate away from each other. Colourful sweet Thandai Mathri is ready to serve.
